BOO! White Chocolate Pretzel ghosties for little monsters

You know how you see these holiday specials that show how to make treats for Halloween but they show it to you the DAY before Halloween (I'm not mentioning names...MARTHA!).  Well, how is THAT supposed to help me?  Unlike you (MARTHA!) I don't have 30 yards of muslin, 2 pounds of fresh truffles and a container of edible gold dust in my closet unlike some insanely rich entertaining guru who has a full time staff, show and a magazine but shall remain nameless.

The one in which I save an onion

The one in which I save an onion

You know how, when you chop an onion, you get that stuff that makes you cry like the time you got your first perm at the beauty school and you looked like a giant meatball on a toothpick?  Well, that stuff is a sulfuric compound.  It's also the stuff that turns your onion discolored, slimy and icky when you try to save it in your fridge.

Homes of Abingdon

Homes of Abingdon

Back from our Appalachian Road Tour, well rested and in love with the little towns hidden in the mountains.   I stopped in Abingdon, Virginia to do some genealogy research as my ancestors settled here in 1682.   I didn't forget all my tens of readers though.  I brought you some of my own picture postcards.

Hush Puppies and the Appalachian Road Tour

I've got relatives there in places too small to find on the map...like Bee Spring, Cave City, Drowning Ford, Big Beaver Lick, Sweet Hollow and Hurricane (that's pronounced "Hurr-ah-kin").  And one of the most popular foods we eat there are hush puppies.

Amish Snickerdoodles - Frugal cookie, funny name

Amish Snickerdoodles - Frugal cookie, funny name

The Amish were green before green was hip. They reuse, recycle and make do.  Simplicity is a way of life.  So with today's economy, I'm reaching back into the recipes my Amish neighbors taught me.   From Shoofly pie to Soda Cracker Pudding,  Homemade Egg Noodles to Half Moon Pie, Amish recipes are simple, frugal and delish!

Bulgur Salad with Feta and Shrimp and a math problem

Bulgur Salad with Feta and Shrimp and a math problem

I know what you were thinking as you read that last recipe…TWO STICKS of BUTTER!?  C’mon, you don’t think I eat like that all the time, do ya?  Oh, you do.  Well, let me prove you wrong.  This is my entry in the Beat the Heat roundup at A Southern Grace.  Anyhoo, bulgur (cracked wheat) can be cooked sans heat so it’s perfect for dog days like these.  Here’s how.

Chicken Katsu with Tonkatsu Sauce (double dipping encouraged!)

Chicken Katsu with Tonkatsu Sauce (double dipping encouraged!)

I checked out a Japanese cookbook and next to the recipes for sushi and miso soup, I found a recipe that would make my cast-iron skillet proud - tonkatsu.  Traditionally made from pork, I decided to try the chicken version called simply Chicken Katsu.
