Tonight, we grilled up some chicken and used the sauce to baste, and the results were spicy and delish! Served up with a cool, cucumber salad, this is what summer dinners are all about.
I love this salad because it’s fat free, sugar free (if you use Splenda), doesn’t spoil in the sun and is a great way to use up those cukes in your garden. Oh, and it takes about 1 minute to make.
CUCUMBER SALAD
2 cucumbers, thinly sliced
1/2 c. rice wine vinegar (a slightly sweet vinegar, found in the Asian section)
1/3 c. sugar or Splenda
1 tsp. dill
Pinch of salt
Toss and chill for at least 1/2 hour.

I like gaspacho. The garden is really producing and I can put all the extra cukes, tomatoes, peppers, even a little squash, with fresh basil, dill and oregano and top it off with some beef broth and the normal spices.

I love cucumber salad - but try making it with maple sugar instead of the Splenda - - - oh it is so delicious. Also a side of kefir to drink makes a very cool meal when it’s hot (like here in the Texas Hill Country). Here’s my info on kefir…

I praise God for all things tubular! Hot dogs cooked slowly on the grill are always a favorite, as well as any of the dozens of varieties of sausages from Gibbs Market in Olmsted Falls, OH.
The cucumber salad recipe in this blog is a good one, but I’d suggest adding a small dash of sesame oil to give it a distinctive Asian taste. Just a dash, because a little sesame oil goes a looooooong way!

My favorite summer food…. I have a griddle attachment to my grill so I can have breakfast outside. Nothing like pancakes and eggs on the deck with a good cup of coffee (Stumptown Roasters!) and the morning crossword. I’m in the Pacific Northwest, so any morning without rain should be taken advantage of.

Favorite summer food… hmmmm… that would have to be spareribs, coated in my own special rub, grilled and smoked over low, indirect heat on the grill for about 4 hours. With a huge side of beer. And maybe some potato salad. God, now my mouth is watering and it’s too late to fire up the grill.

My favorite foods of the summer are the ones that come out of my Mom’s garden…fresh red tomatoes, cucumbers, squash, zucchini, corn, and watermelon. Mmmm, mmmm.

My favorite summer foods include caprese salad (tomatoes, fresh mozzarella, basil), key lime pie and…cucumber salad! Seriously, yours up there is pretty much close to what we throw on the plate all summer. Looks scrumptious to me in any season…but so cold and perfect in summer.

spicy BBQ chicken bits, with crunchy little burnt bits…

Well, how can you pick just one?? Last night, we had sweet corn fresh from the field and so that’s my favorite now, but two days ago, we had our first sauteed yellow squash and zuchini, so of course that was delightful for the tastebuds… Garden produce - Yeah!

Mmmmmmmmm . . . grilled burgers with all the fixin’s - cheese, lettuce, tomato, pickles, onions, and homemade not so secret thousand island dressing sauce. Add a side of potato salad, some deviled eggs, and grilled corn on the cob for a delightful summer feast! If you have room for dessert - fresh strawberry shortcake! Ahhhhh - life is good!

Watermelon which is strategically placed on the top shelf of my side-by-side fridge so the kids can’t sneak into it and I get to eat all by myself. I will share the ice cream but you better not touch my watermelon.

I have some of this sauce and just made a killer meatloaf from one of their recipes. good stuff!!!
