FOOD (hungry much?), salad

Cucumber salad and a food giveaway!

Country Bob\'s Special SauceI’ve got a great giveaway for my readers…two winners will receive a Country Bob’s prize pack featuring two bottles of their famous sauce and a cookbook. If you’ve never had Country Bob’s, you’re missing a unique taste.  It includes tamarind for a really unique kick.  Tonight, we grilled up some chicken and used the sauce to baste, and the results were spicy and delish!   Served up with a cool, cucumber salad, this is what summer dinners are all about.

I love this salad because it’s fat free, sugar free (if you use Splenda), doesn’t spoil in the sun and is a great way to use up those cukes in your garden.  Oh, and it takes about 1 minute to make.

CUCUMBER SALAD

2 cucumbers, thinly sliced
1/2 c. rice wine vinegar (a slightly sweet vinegar, found in the Asian section)
1/3 c. sugar or Splenda
1 tsp. dill
Pinch of salt

Toss and chill for at least 1/2 hour.

Country Bob\'s Special Sauce BBQ Chicken

Sounds good, no?  All you need to do to get your hands on some of Country Bob’s Special Sauce is to leave a comment stating your favorite summer food by August 10.  Two winners will be randomly drawn to receive a couple bottles of the sauce plus a cookbook.   And if you don’t win, you can still get one free bottle by signing up at the company website!

I like gaspacho. The garden is really producing and I can put all the extra cukes, tomatoes, peppers, even a little squash, with fresh basil, dill and oregano and top it off with some beef broth and the normal spices.
    Yummmm!!!

I love cucumber salad - but try making it with maple sugar instead of the Splenda - - - oh it is so delicious. Also a side of kefir to drink makes a very cool meal when it’s hot (like here in the Texas Hill Country). Here’s my info on kefir…

    Does Margarita count as food?

  15. Audrey Says:

I love corn on the cob in the summer, some good fried chicken and potato salad can’t be beat either!

  16. Phil Says:

I praise God for all things tubular! Hot dogs cooked slowly on the grill are always a favorite, as well as any of the dozens of varieties of sausages from Gibbs Market in Olmsted Falls, OH.

The cucumber salad recipe in this blog is a good one, but I’d suggest adding a small dash of sesame oil to give it a distinctive Asian taste. Just a dash, because a little sesame oil goes a looooooong way!

  17. Mom24 Says:

My favorite summer food is BBQ ribs.

  18. Jessica Says:

Great post - I’ll have to try the cucumber salad.

My favorite summer food…. I have a griddle attachment to my grill so I can have breakfast outside. Nothing like pancakes and eggs on the deck with a good cup of coffee (Stumptown Roasters!) and the morning crossword. I’m in the Pacific Northwest, so any morning without rain should be taken advantage of.

  19. Trace Ogaz Says:

a really good burger with beanie weenies and watermelon for dessert!

  20. John B Says:

Favorite summer food… hmmmm… that would have to be spareribs, coated in my own special rub, grilled and smoked over low, indirect heat on the grill for about 4 hours. With a huge side of beer. And maybe some potato salad. God, now my mouth is watering and it’s too late to fire up the grill.

  21. Sherri Says:

My favorite foods of the summer are the ones that come out of my Mom’s garden…fresh red tomatoes, cucumbers, squash, zucchini, corn, and watermelon. Mmmm, mmmm.

  22. Marilyn @ Simmer Till Done Says:

My favorite summer foods include caprese salad (tomatoes, fresh mozzarella, basil), key lime pie and…cucumber salad! Seriously, yours up there is pretty much close to what we throw on the plate all summer. Looks scrumptious to me in any season…but so cold and perfect in summer.

  23. kittie Says:

    Ooo - so hard!

Corn on the cob, bbq’d with S&P and lashings of butter…
Tomatoes fresh from the vine, sliced on really good bread…
spicy BBQ chicken bits, with crunchy little burnt bits…
Blueberries, blackberries and raspberries with a dollop of natural yoghurt…

and on, and on, and on…

  24. Kendra Says:

Watermelon, corn on the cob, tomatoes. Anything fresh from a garden! I like the site redesign, btw (I may be really slow on this, but I am just getting back up to speed)!

  25. Alison Says:

I love corn on the cob

  26. Carla Says:

Well, how can you pick just one?? Last night, we had sweet corn fresh from the field and so that’s my favorite now, but two days ago, we had our first sauteed yellow squash and zuchini, so of course that was delightful for the tastebuds… Garden produce - Yeah!

  27. Nancy Says:

Mmmmmmmmm . . . grilled burgers with all the fixin’s - cheese, lettuce, tomato, pickles, onions, and homemade not so secret thousand island dressing sauce. Add a side of potato salad, some deviled eggs, and grilled corn on the cob for a delightful summer feast! If you have room for dessert - fresh strawberry shortcake! Ahhhhh - life is good!

  28. Valerie Says:

Watermelon which is strategically placed on the top shelf of my side-by-side fridge so the kids can’t sneak into it and I get to eat all by myself. I will share the ice cream but you better not touch my watermelon.

  29. Susan Says:

I’d have to say it’s all the summer fruits really. Strawberries, blueberries, watermelon, peaches…all of it!

  30. Lisa@The Cutting Edge of Ordinary Says:

I love anything grilled, but give me some teriyaki salmon and pineapple on the grill - heaven!

  31. Jessica Says:

My favorite summer food is a toss up between cold watermelon or grilled corn. YUM!!!

  32. Rhoda Says:

Oh, I missed it by one day! Darn it…my favorite summer food is WATERMELON! Hands down.

    Rhoda

  33. megan Says:
