What age do you have to be before birthdays aren’t a big deal? Sure, you don’t have the year long countdown you had when you were 7, but everyone hopes for a little pampering or kind well wishes. The part I think we struggle with is getting a year older. I am now 46, which is one year more than 45 which is now closer to 50 than 40. But a wise friend of mine said that every year older sure beats the alternative. So I’m celebrating 46 years of surviving all the stupid stunts of my youth and all the moments I said, “These kids are going to be the death of me!”
I usually bake myself my favorite German Chocolate Cake but this year, I’m being lazy and baking these very easy gooey Birthday Blondies.
Birthday Blondies
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1-1/2 sticks of butter, melted and slightly cooled
2 cups firmly packed light brown sugar
2 large eggs
1 -1/2 teaspoons vanilla extract
1 cup toffee bits (I like Heath Toffee bits or you could use crumbled candy)
Preheat oven to 350°F. Grease bottom and sides of an 9×13-inch pan or Pyrex dish. In a mixing bowl, stir together the flour, baking powder and salt, and set aside.
With an electric mixer, cream the butter and sugar together, then beat in the eggs and vanilla and blend well. With mixer running at low speed, gradually add the dry ingredients. Stir in the chocolate chips and pecans.
Spread the batter evenly into the prepared pan or baking dish, and bake for about 30 minutes or until a toothpick inserted into the center comes out clean. Cool completely before cutting if you can.

Happy Birthday! I love blondies. I really enjoy that dessert at Applebee’s with the maple sauce over blondies. My guilty pleasure. This looks delicious.

Happy birthday! My birthday is in a couple of days and this will be the very first one that I am going to have a big celebration so I am pretty excited
I don’t care about how old I am (21 if anybody asks, LOL) the point is the celebratation, right

Try adding chocolate chips…amazing. These are my mom’s specialty and she uses a higher butter ratio than this. I’m gonna have to test this version!

The recipe states “stir in chocolate chips and pecans” but there are none listed in the ingredients, only toffee bits.

Happy Birthday! The blondies look great. Honestly, this is only the 2nd time I’ve ever seen blondies and have decided that I will have to try them.
I’ve heard that they’re the unchocolate brownie.

@ Charlene, good spotting! Yep, my recipe usually calls for chocolate chips and nuts but I went with toffee this time and like it much better!
