Amish Baked Oatmeal is like eating a cookie for breakfast

I think I mentioned before that I grew up smack dab in the middle of an Amish community and learned a lot about simple, easy, frugal recipes.   This one is a fave because you can toss it in the fridge and throw it in the oven the next day (I’ve broken a few dishes from all that throwing and tossing in my kitchen)!

Let me count the ways I love this recipe.

  1. It’s like eating a cookie for breakfast.  Don’t tell Mom.
  2. You can prep it the night before and pop it in the oven while the kids are getting dressed.
  3. Leftovers are yummy warmed up in the microwave.  In fact, I often double this and have a warm, filling, healthy breakfast in the bag for the whole week!

    Can you use regular rolled oats instead of quick-cooking oats?

    I’ve never tried it that way, but since it’s being baked, I don’t see why not.

    I don’t know what I did wrong because I followed this recipe to a T, but mine ended up all dry and crumbly after 25 minutes in the oven. What happened?

    I’m in love with this oatmeal. Who needs potpouri with this wafting through the kitchen? I would make a lot of people in my house happy if I baked this.

    This is a great recipe for people that are not traditional oatmeal eaters – like me. I grew up hating oatmeal, but this is perfect. We offer an Amish Recipe Collection on our website, and even after creating all those wonderful dishes I still LOVE this recipe. As for the one that was dry, I wonder what kind of dish was actually used to bake it in. If it was dark metal, that could be the problem.

    Loved this recipe. I cut the sugar to 1/3 cup, added 2 granny smith apples and doubled the vanilla. Then I told my kids it was dessert and they thought they were getting a treat. I am a mean mommy.

    Thanks in advance. I’m going to make these (en grosse) just so I can have something to eat as soon as I wake up, because one’s metabolism doesn’t start churning calories until one eats after waking, and I never eat after I wake just because I’m not real hungry and I try to get some work done as soon as possible (after brushing and rinsing my teeth of course).

    And it’s healthy, to boot; none of those artificial colors/flavors that are loaded in processed foods ‘to preserve color/flavor/freshness.’ ps: ditch the salt, it’s unnecessary. I learned that from my mom 25 years ago when I was a kid. Whenever i helped her make chocolate chip cookies, i’d always round up the ingredients but she always made me skip the salt, and you know what, I couldn’t imagine the cookies tasting any better than the way I was raised to make them. Sodium = bad for you, FDA daily allowance is like, a teaspoon, and you consume more of that throughout your day from everything else you eat.

    I just made this this morning and wow..it was amazing. I did mess up and use regular rolled oats rather than the quick oats, but with a few tablespoons of peach yogurt, it was sublime. Thank you for this perfect cold morning stick to your ribs, uber easy recipe.

    This looks (and probably tastes) delicious, but it must be like eating a cookie, because it basically is a cookie. With that much butter and sugar, it’s hardly a (healthy) breakfast. It would be great as a dessert, though.

    this is an awesome recipe. i’ve made it several times and i just love it. i sub splenda brown sugar and egg beaters to healthify it a little bit. no change in texture or taste. easy way to fix yourself breakfast for the week and only have to cook once. i put it in smaller “casseroles” and bake it for a little shorter time. mmmm….think i’ll go crank some out for the balance of the week. thanks, francie, for sharing your amish experience with the rest of us.
